If you're looking for a product that can help track your expenses, may I recommend trying YNAB - You Need A Budget? It's a great software that helps track your expenses and is capable of managing multiple accounts. I personally use it to track my own budgets and you can manipulate the categories to your liking.
I know this is not much of a sales pitch for myself, but you guys are a NPO for animal shelter so heck why not. But in the off chance you still prefer an Excel spreadsheet as the final product, I can assure you the same functionality can be replicated as shown in the YNAB software. I have produced many Excel spreadsheets of varying difficulty over my engineering career.
