Design a new Logo

After a false start with my initial project designer, I now have a more streamlined request.
We are looking for a logo for our distillery and we know that we want it to incorporate a capital 'L' and a bear, something similar to the heraldic shield of the Earls of Warwick.
We are based in Newburgh, Fife and if you google 'Newburgh Bear' you will see that there is an 80 meter high bear carved into the hill behind us, and this would be the base for the design, but only the base, not just a replica.
It is important that the bear is not chained in any way, or wearing any kind of 'muzzle'.
Underneath the logo I would like 'The Lindores Abbey Distillery' in an original font.
All the info regarding Lindores Abbeyt is on line so take any references from that though we are looking for a design that reflects on the long history of Lindores, but is aimed at the modern consumer.
