Create \'front end\' of online stores with Magento

We are searching within Australia for someone to do some work for us but would also like to consider having it outsourced, hence our project post herewith. Our main concern with outsourcing is how much access we need to give a virtual stranger to our servers, etc. Our security is of utmost importance so we also wish to know how much access a contractor would need? What isn't mentioned in the advert is that we use 'Web Ninja' ([login to view URL]) to integrate between Exonet and Magento so we'll need someone who can effectively communicate with our technician from Web Ninja too (to make sure the 'front end' complies with what Web Ninja needs). This role includes developing and managing Magento web stores, photography, creating store communications, online advertising, developing imagery, website monitoring and maintenance as well integration to backend logistics systems.
