Developing a program to automatically build a chronology from a set of emails

We would like to develop a program to automatically build a chronology from a large set of emails (say, 1000+).
We typically receive a PST file of emails from our clients. We regularly work with an electronic discovery platform called Goldfynch to convert those emails into an indexed set of PDF documents. As part of that indexed set, we have a CSV file listing each email and attachment, and a corresponding text file containing the full text of the email (including the email header and body).
We would like to take that a step further and develop a program that automatically builds a chronology in Excel (or a CSV file) from the body text from that set of emails. For example, if John Smith sent an email to Adam Shore on May 15, 2023 at 2:33 PM writing: "Sure, pizza works", the output would be an Excel/CSV file with the date in one column and the email header and email body information in a second column. The program would extract and export the same information from forwarded emails earlier in the chain, as separate rows (and, ideally, removing duplicates). An example input and output is attached.
Ideally, the program should be able to run without any licenses not included in a Microsoft 365 package. As you can probably tell, we're not familiar with this type of project, so some support would be required on technical details.
