Summarise how book publishers work, especially regarding payments to authors and artists

I run a small publishers, and am looking to expand. I do not have a background in regular publishing, so need to understand the basics of how payments to authors & artists work, when, how much, and ongoing payments. Also, contract templates, including who retains ownership of the works.
