Add Itegas to EPROM in arduino

Hi, I have had a arduino program which monitors hot water temperatures for solar and heat exchanger heating for a hot water service and spa pool and controls the circulation pumps. It was written for me through freelancer and all works well except there are 6 user inputs in the program which I simply need written to eprom (so as when we lose power I don't have to re-enter user intputs). Therefore the job is as follows:
1/ Referring to the attached arduino program, I need itegars UI1, UI2, UI3, UI4, UI5, & UI6 all written to EPROM so as values will not be lost on arduino power down.
2/ Only if its easy, if the LCD backlight could be turned off after 5 minutes of inactivity of inputs pg = digitalRead(10); up = digitalRead(11); dw = digitalRead(12). And then turn back on again if one of these inputs goes HIGH. This is purely a energy saving feature.
Should be simple job for someone who knows more about programming than me!
I can send the whole system circuit diagram if its needed to better understand the whole system operation.
