Migrate Web Hosting

I need to switch from a dedicated hosting environment to either a shared hosting environment or at least a cheaper dedicated box. I currently have 2 boxes (production and development) at [login to view URL], and it is way more power than I need. I would like to migrate that production box to a shared solution, perhaps at 1and1.com. It contains about 25 web sites a few databases and a few SSL certs. All the code is running on Linux & Apache, built in PHP and MySQL. These are all ecommerce sites, so it is important that they not go down during the process for more than a few hours. I'd also like to make sure the software firewall is set up and there is a nightly backup of all code, either to another shared hosting account someplace, or my desktop.
