Hi there... I have just read your project requirements and it looks really interesting... Regarding the conversion to PCB it's straight forward task, the Arduino pro mini uses ATMEGA328P, which we need to lookup the pins you're using in the schematics and put define them in the final PCB. Regarding the negative voltage reading I think is not straight forward task because we need make sure the input voltage at any case doesn't go below zero and doesn't exceed 5v for the ADC. I have been doing embedded systems since 2013 and I have done many similar projects before that involve MCU and PCB and other parts. I hope we get to chat to discuss more... Regards
